Grilling Tips:
- Grill Setup: Create two-zone fire - hot direct heat and cooler indirect zone. This gives you control for perfect results.
- Burgers: Form 1/3 lb patties, make thumb indent in center. Grill 4-5 minutes per side over direct heat. Don't press down!
- Steaks: Pat dry, bring to room temp, season heavily. Sear over high heat 2-3 minutes per side, then move to indirect heat to finish. Target 130-135°F for medium-rare.
- Reverse Sear Method: For thick steaks, start on indirect heat until 10°F below target temp, then sear 1-2 minutes per side over high heat. Restaurant-quality results!
- Resting is Critical: Let steaks rest 5-10 minutes after grilling. This redistributes juices for maximum flavor and tenderness.
Pro Tip: Our dry-aged beef develops an amazing crust on the grill. Keep it simple - salt, pepper, and high heat!
